Grilled Tuna Melt Sandwich

This Tuna Melt Sandwich is fairly quick to prepare and super tasty to tantalize your taste buds. A high shot to call for a mere sandwich but this sandwich is all that. I used smoked tuna as it adds a great smoky element with the grilled bread. Simple yet scrumptious. Savor!

Grilled Tuna Melt Sandwich

Serves 2

4 slices wholegrain sandwich bread
4 tsp. low calorie butter or margarine
1 tbsp. garlic powder
1 tsp. extra virgin olive oil
1 medium onion, finely diced
*2 tsp. cayenne powder
1 can smoked chunky tuna, drained
1 small tomato, seeded and diced
1 tsp. fresh cracked black pepper
1 tbsp. cream cheese
1 tbsp. mayo
1 tsp. minced pickles, optional
4 slices cheddar

Combine butter and garlic powder and lightly spread both sides of each slice of bread with mixture. Heat a non stick skillet and lightly brown both sides of buttered bread. Remove bread from pan and reserve.
In same pan, add olive oil and onions. Saute onions until soft and lightly browned then add cayenne and tuna. Continue to saute for another minute then add tomatoes and pepper. Turn off heat.
In a small bowl, combine cream cheese, mayo and pickles if desired.
Grease and heat stove top grill.
To assemble sandwiches, lay 2 slices of cheddar on 2 slices of bread then top with 1/4 teaspoon of the cream cheese mixture. Place the tuna mixture on the remaining two slices of bread. Carefully place the slices of bread with cheese on top of the slices with tuna and press down on tops of sandwiches to mold fillings in place.
Place sandwiches on heated grill and cook about 5 minutes, turning halfway through.
Halve sandwiches and enjoy while still hot.

*If you're not inclined to spicy, chicken out with some paprika instead ; p.
