Chocolate chip Oatmeal Breakfast Muffins



These muffins are one of those things that are absolutely decadent yet are great for you. 
Chockful of oats and whole wheat flour, it meets the health quota and the chocolate chips and peanut butter are a totally indulgent, classic flavor. To me, these are best savored warm from the oven...all that melting, gooey chocolate! Mmm...mmmm!

Chocolate chip Oatmeal Breakfast Muffins

Makes a dozen muffins
                                                                     
  1 cup whole wheat flour
                                                                1 cup all purpose flour                                       
                                                                1 tsp. baking soda
                                                                1 tsp. baking powder
 1 tsp. cinnamon powder
1/2 cup melted butter or canola oil
1 cup smooth peanut butter
1/2 cup brown sugar
2 eggs
1 tsp. vanilla essence
1/4 cup buttermilk
1 1/2 cups semi-sweet chocolate chips
1 cup oats

Pre-heat oven. Grease muffin tin.
Combine dry ingredients. In a separate bowl, mix butter or oil and peanut butter. Beat in sugar until dissolved. Add eggs, vanilla and buttermilk and combine thoroughly. Add dry ingredients to peanut butter mixture. 
Stir in chocolate chips and oats.
Spoon into muffin cups and bake for 25 minutes or until toothpick inserted in the center of muffin is not wet but moist with a few crumbs attached. Savor a great breakfast treat!
